As I mentioned in my previous post I got a haircut at Green with Envy Organic Hair Studio a couple of days ago. What you didn't know is that I decided to tip Maggie, the owner, with cupcakes instead of money (perhaps in poor taste to some but she loved it!). Her place is right across the street from Sprinkles, the fancy pants cupcake place but she is veggie, too, so her sweet tooth was very interested in my cupcakes. I asked her if she preferred chocolate or vanilla, she said either. I decided to go with both. I couldn't have been happier with these little delicious cakes! I made a gooey ganache to go on top and sprinkled them with candy coated fennel seeds that I bought from my local Middle Eastern grocer.You could just as easily serve them as ridiculously decadent chocolate chip muffins by omitting the frosting but why kid yourself, go for the goo! ;c) Maggie and her fellow fabulous stylists thought they just might be the best cupcakes they had tasted, I agree, and James (my chocolate-dissing husband) even adored them. My only regret was not making more of them!
chocolate chip cupcakes
1 cup french vanilla silk soy creamer
2 tsp white vinegar
1 cup whole wheat pastry flour
1/4 cup unbleached all purpose flour
2 tbsp arrowroot powder
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup Earth Balance margarine
1/2 cup sugar
1 tbsp vanilla extract
1/2 tsp almond extract
1/2 tsp chocolate extract
1/2 cup chocolate chipsPreheat the oven to 350 and put your cupcake liners in your tin. In a small bowl put the vinegar in with the creamer to sit and curdle a bit. Mix the dry ingredients together. In a separate large bowl soften the margarine with an electric mixer until fluffy, add in the sugar and extracts to cream together. Mix in half of the creamer-vinegar, then half of the dry ingredients, then the remaining creamer, then last of the dry. Fold in the chocolate chips and fill your liners about half way with the batter. Bake for ~22 minutes then let cool before frosting or eating as is.
gooey ganache frosting
1/2 cup french vanilla silk soy creamer
1/2 cup dark chocolate chips
2 tbsp agave nectar
* your cupcakes must be completely cooled to use this frosting!
Heat the creamer in a sauce pan until it begins to boil. Remove from heat, stir in the chips and nectar until smooth (it gets a little weird and goopy at first but have no fear, keep stirring and it will be fantastic). Set it aside until it reaches room temp before using. I spooned it into the middle of mine and then swirled it around a bit with the back of my spoon. If you pop it in the fridge it will be stiff and you can make a more substantial frosting but this is perfect with just a dollop on top.

Thanks, Windowbus. That is interesting, I'm not familiar with that survey. It looks like all of my favorites got the lowest scores :c/ What sort of creamer do you use? I usually opt for rice or almond milk as I tend to overload on soy in other areas but I have yet to find anything nearly as good as the Silk Soy Creamer (and boy did it do well in these cupcakes). That stinks that they may not be as great as I thought. I appreciate the info (and the recipes forwarded to your daughter!)

pretty much try to stick with eden....i wish that costco would make a stand! what an influence they could have. too many socalled healthfood stores and coops do not stand by their mission statements and sell products in the bottom half of the list.
