
James (my husband) has been craving cherry ice cream for days now. I decided I would figure out how to make some that we both could enjoy. I used my ice cream maker that I bought for super cheap at Target, a variety of milk substitutes and along came this fabulous confection that I have practically made myself sick on for not wanting to put it down! So.. here is my disclaimer, this is so good you will want to eat it all! Do not plan to share, do not plan to just eat a couple of bites - this is a commitment my friends and you will not be disappointed. It would also be great with some vegan chocolate chips mixed in or topping it.. mmmmm. Enjoy!
cherry-almond (non-dairy) ice cream
1 cup rice milk (or whatever non-dairy milk you have on hand)
1/2 cup coconut milk (I used lite but full fat would be extra creamy)
1/2 cup soy creamer (I use Plain Silk coffee creamer)
1/2 cup sugar
Dash of salt
1/2 cup pureed frozen dark cherries
1/2 cup whole or halved frozen dark cherries
1/4 cup chopped walnuts
1 teaspoon vanilla extract (the good stuff, don't skimp!)
1 teaspoon pure almond extract
First whisk the milk substitute, sugar, and salt *** if you are using sweetened milk substitute decrease your sugar amount accordingly. When the sugar has dissolved add the coconut milk and soy creamer then the vanilla and almond extracts. Whisk together to blend then add the pureed cherries (I used my magic bullet but a food processor would work and mixed it with a couple tablespoons of coconut milk so it would puree). I poured the mix into my ice cream maker and let 'er rip! I put in the whole cherries and walnuts after it had been mixing for a few minutes to thicken but I imagine before hand would work, too. It took about 15 minutes in my handy-dandy machine once it got going.

It was so good!! I quadrupled the recipe and used it in a gallon ice cream maker & took some to our church ice cream social & got several compliments out of it!!! I didn't put the nuts in there, though. I love it! Much cheaper to make than to buy the non-dairy ice cream from the store!!!
